Turkey Cutlets With Peas and Spring Onions
With spring bringing some pretty inconsistent weather, you're just as likely to be in the mood for something warm and hearty as you are for something light and citrusy. If the former is the kind of mood you're in, this dish will definitely deliver. The presence of fresh peas and spring (baby) onions at your local farmers' market is usually a telltale sign that spring has arrived. Paired with lean organic turkey cutlets, this dish is easy to make, quick to clean up, great for leftovers, and a perfect choice to serve up at a dinner party.

Turkey Cutlets With Peas and Spring Onions

1/2 cup flour (preferably whole-wheat)
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
1 pound organic turkey breast, cutlets or steaks, 1/4-inch thick
2 tablespoons extra virgin olive oil, divided
4 ounces organic shiitake mushrooms, stemmed and sliced (about 1 1/2 cups)
1 bunch organic spring onions (or scallions), sliced, whites and greens separated
1 cup reduced-sodium chicken broth
1/2 cup dry white wine, (such as Sauvignon Blanc)
1 cup organic peas, fresh or frozen (thawed)
1 teaspoon freshly grated lemon zest

1. Whisk flour, 1/4 teaspoon salt and pepper in a shallow dish. Dredge each turkey cutlet in the flour mixture. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the turkey and cook until lightly golden, 2 to 3 minutes per side. Transfer to a plate; cover with foil to keep warm.

2. Add the remaining 1 tablespoon oil to the pan and heat over medium-high heat. Add mushrooms and onion (or scallion) whites and cook, stirring often, until the mushrooms are browned and the whites are slightly softened, 2 to 3 minutes. Add broth, wine and the remaining 1/4 teaspoon salt; cook, stirring occasionally, until the sauce is slightly reduced, 2 to 3 minutes.

3. Stir in peas and onion (or scallion) greens and cook, stirring, until heated through, about 1 minute. Stir in lemon zest. Nestle the turkey into the vegetables along with any accumulated juices from the plate. Cook, turning the cutlets once, until heated through, 1 to 2 minutes.

Makes 4 servings.

To dream that you are being sacrificed, signifies your tendency to punish yourself. The dream may parallel waking sentiments where you feel that others do not appreciate your talents and efforts or that you are not being recognized for what you have given up. Alternatively, the dream means that you need to eliminate certain aspects of your life and make time and space for more productive and rewarding experiences.

To see the devil in your dream, signifies fear, limitations, and negative aspects of yourself. You may be harboring feelings of guilt. It is time to release these feelings. Alternatively, the devil represents intelligence, cunningness, deception, and cleverness.

To dream that you fight off the devil, indicates that you will succeed in defeating your enemies.
To dream that the devil talks to you, suggests that you will find certain temptations hard to resist even though you know it is not in your best interest.

To dream that you and the devil are friends, suggests that you are easily influenced and can be persuaded into doing something you do not necessarily want to do. Alternatively, you may be dealing with issues of morality

To dream that you are carrying a knife, signifies anger, aggression and/or separation. There may be something in your life that you need to cut out and get rid of. Perhaps you need to cut ties or sever some relationship. Be more divisive. Alternatively, a knife refers to some sexual tension or sexual confrontation.
If the knife is dull, then it denotes that your hard work will result in little or no gain.
To dream that you are wounded by a knife, is symbolic of masculine or animalistic aggression.

To dream that you are waiting, is indicative of issues of power/control and feelings of dependence/independence, especially in a relationship. Consider how you feel in the dream while you were waiting. If you are patient, then you know things will happen at their own pace. If you are impatient, then it means that you are being too demanding or that your expectations are too high.

Alternatively, the dream may denote your expectations and anxieties about some unknown situation or decision. You are experiencing a sense of anticipation or uneasiness.

Craving Mexican food? There's no need to go out for a heavy, calorie-loaded Mexican dinner. Forgo the extra fat and calories, and instead create this delicious steak taco meal for your family. It combines savory and sweet flavors and can be prepared in less than 25 minutes!

Chipotle Flank Steak Tacos With Pineapple Salsa

12 soft whole-wheat or whole-grain tortillas
1 teaspoon extra-virgin olive oil
1 teaspoon chipotle chili powder plus 1 pinch, divided
1 teaspoon Kosher salt, divided
1 pound organic flank steak beef, trimmed of fat
1 organic pineapple, peeled, cored, and cut into 1/2-inch-thick rings
1 organic red bell pepper, finely diced
1/2 cup minced red onion
1/4 cup chopped fresh organic cilantro
2 tablespoons red wine vinegar

Preheat grill to high. Stack tortillas and wrap in heavy-duty foil. Combine oil, 1 teaspoon chipotle powder, and 1/2 teaspoon salt in a small dish. Rub mixture into both sides of steak. Place the tortilla stack on the coolest part of the grill or upper warming rack, if possible, and heat, flipping once, until warmed through and very pliable.

Meanwhile, grill the steak for 4 to 6 minutes per side for medium, or until desired doneness. Grill pineapple rings until moderately charred, 1 to 2 minutes per side. Remove the tortillas, steak, and pineapple from the grill. Let the steak rest for at least 5 minutes before slicing very thinly crosswise into strips.

Meanwhile, dice the pineapple and transfer to a medium bowl. Add bell pepper, onion, cilantro, vinegar, the remaining pinch of chipotle powder, and the remaining 1/2 teaspoon salt; toss to combine. Serve the sliced steak in the warm tortillas with the pineapple salsa.

Makes 6 servings.

Fat Boy

Fat boy
By Jewel

Goes to the pool
Sees his reflection
Doesn't know what to do
He feels little inside
And filed with pride

Oh, fragile flame
When no one sees the same

Fat boy
Goes about his day
Trying to think of funny
Things to say
Like, "This is just a game I play,"
And "I like me this way."

Oh, fragile flame
When no one feels the same

Hush, sleep
Don't think
Just eat
You're Daddy's little boy
You're Momma's pride and joy
You know they love ya
But not because they hold ya

And fat boy says
"Wouldn't it be nice?
If I could melt myself like ice
Or outrun my skin
And just be pure wind?"

Oh, fragile flame
Sometimes I feel the same
